Pear Chutney

Ingredients

  • 3lbs Pears
  • 1 1/4 Cups Brown Sugar
  • 1 1/2 Cups Apple Cider Vinegar
  • 1 1/2 Cups Sultana Raisins
  • 1 Lemon
  • 1 Onion
  • 1/4 Cup Fresh Ginger
  • 1 Garlic Clove
  • 1/2 tsp Salt
  • 1/2 tsp star anise seeds
  • 1/4 tsp cinnamon
  • 1/4 tsp ground black pepper
  • 3 cloves grounded into powder

Directions

  1. Peel, decore and chop up pears into cubes
  2. Wash and remove seeds from lemon then chop finely with the skin included
  3. Finely chop the garlic and onion
  4. Peel and finely chop the ginger root
  5. Combine all ingredients into a large pot and cook for 30mins on medium-high heat until sauce is thick enough to drag spoon across bottom of pot and see the bottom for a second without liquid rushing in too quickly
