Easy Breakfast Quesadillas

Ingredients

  • 2 eggs
  • Hot sauce (e.g Cholula)
  • Pinch of salt
  • 1/3 cup cooked pinto beans or black beans, rinsed and drained
  • 2 Tsp butter or extra-virgin olive oil
  • 1 Tbsp chopped green onion
  • 1 Tbsp finely chopped cilantro
  • 1 medium tortilla
  • 1/2 cup grated cheddar cheese

Directions

  1. Whisk eggs with hot sauce and salt in a bowl
  2. Scramble eggs in a pan with some oil or butter for a few minutes
  3. Place eggs in a bowl to rest
  4. Cook all other ingredients in the pan for a few minutes
  5. Combine together and insert into tortilla
  6. Press tortilla in pan until crispy and golden
  7. Serve with cheese
